Italian Cauli Tot Casserole 

   This meal is so simple and subbing Pasta for Cauli Tots didn’t compromise the taste at all! The original recipe (can be found here) called for cauliflower rice and marinara sauce but after spending far too much time rifling through jar after jar of red sauce, we found this Bertolli Sauce had the least amount of carbs. 

   Now that we portion control, we always have left overs and my husband had the left over casserole the next day and said it was still good!

 List of Ingredients (serves 4):

1 lb. Ground Meat

1 cu. Pasta Sauce

1/2 cu. Diced Onion

1 tbsp. Italian Seasoning 

1 tbsp. Minced Garlic 

1 bag Cauli Tots

1 cu. Shredded Mozzarella 

Italian Seasoning (to sprinkle on top)

Let’s get started!

Cook Ground Meat with Onion, Garlic and Italian seasoning. Once meat is done, remove from pan.

I left any residue from the ground meat in the pan and placed Cauli Tots in. (I used our Aroma Cooker).

   Add 1 cu of Pasta Sauce into the meat and stir well.

Pour Meat over Cauli Tots and spread evenly.

Sprinkle 1 cu Shredded Mozzarella on top. Add Italian seasoning if you’d like. Close lid and set for 10 minutes (I used steam setting).

The truck filled with the delicious smell of spaghetti which was absolutely wonderful!

Serve and enjoy with a crisp side salad!
