Protien Bites

   Our low carb lifestyle can make breakfast foods monotonous, because the “incredible edible egg” can get old. We tend to have Protien Bars for breakfast but either we get them at Wal-Mart and it’s virtually the same selection at every store or we pay twice as much for them at a truck stop.
   I decided to make my own Protien Bites. My disclaimer: Oats do have quite a bit more carbs than our usual low carb alternatives but they do keep you feeling full and give you that extra energy. What you add to these oats is what will determine if they stay lower in carbohydrates and other values. 

   Being that this is my first go at it, I decided to splurge a bit and that is ok if you take that into consideration when planning your meals for the rest of the day. I don’t see these being a continuous staple but throwing them in every once in awhile might keep us from getting burnt out on the other stuff.

  The best part about protein balls is you can basically throw oats and a few other ingredients into a bowl and add a little peanut butter and honey and you’ll make something that will stick together! And it does not have to be actual peanut butter it could be any nut/seed butter. 

So let’s get down to Business…

I have to introduce you to my cute little measuring cups my parent’s bought us at a home and garden show last year. These silicon collapsible cups make it easy to store them in small spaces. You can find their great products Here

                           – Berry Bites –
🍒Berry Bites🍒

1 cu Oats 

2 tbsp Peanut Butter 

2 tbsp Honey

1/2 cu dried berries (though a 1/4 cu would have been better)

1/2 tsp Vanilla Extract

1/2 tsp Ground Cinnamon

Throw it all into a bowl and mix very well. I transferred it to a smaller dish (Star Wars Container)  and placed in the fridge for 30 minutes. It won’t be as sticky and it should be easier to form into balls. I got 15 balls out of this amount of mix. Store in an airtight container. 

                 – Cookies ‘N Cream Bites –

🍯Cookies ‘N Cream Bites🍯

1 cu Oats

2 tbsp Peanut Butter 

2 tbsp Honey 

1/4 cu Protien Powder (I used this kind)

2 tbsp White Chocolate Chips

1/2 tsp Vanilla Extract

Same steps apply for all batches; stir really well, chill and roll into balls (it is so easy!)

     – Cookies ‘N Cream Balls & Strawberry –

 🍓Strawberry🍓

1 cu Oats

2 tbsp Peanut Butter 

2 tbsp Honey 

2 tbsp White Chocolate Chips 

1/2 tsp Vanilla Extract 

(Same directions as above)

   I keep mine in a container with a closed lid. We had them for breakfast this morning and they were great! I have very little work space in the sleeper berth of our truck, but found it super easy to make these and since they’re no-bake, it makes them even better!

   I definitely will be on the look out for other “add-ins” to help reduce cal/fat/carb content! I hope you enjoy 😀
