Crockpot Nachos

   Nachos on the road? Sure! And it’s all done in the Aroma Cooker. We like a variety of ingredients in our nachos so they tend to be eaten with a fork, but taste oh so good!

Here are the ingredients we used (now, being that there is just two of us on the truck, we end up only using half of each of the larger cans and half of the ground beef mixture so I saved the rest of it for something for lunch tomorrow). The ground beef mixture is 1 lb. lean ground beef, cooked and added 1 packet of low sodium taco seasoning, 1/2 cu of water and 1/2 a diced onion. Usually we use a fiesta cheese mix but we didn’t have any on hand, Mozzarella worked just as well!

 Layer ingredients into pot (chips, ground beef mixture, black beans, corn and olives and then top with shredded cheese. You can do two layers if you’d like. Cook on,”white rice” setting until cheese is melted.

When you plate your nachos, add a drizzle of enchilada sauce (or salsa, I’m not a fan of tomatoes, so this was my choice) and a dallop of sour cream and you are good to go!
